Please read the Origin of Hypoglycemia page first, and then look at the Insulin and its Metabolic Effects discussion to understand why it is so important that we eat in a way that does not necessitate that our body produce a lot of insulin. To truly understand diabetes, you have to understand insulin, and you have to understand the role diet plays in raising insulin. You also need to understand that advanced glycation endproducts are involved in the disease process of diabetes, as well as other diseases, and that they come from cooking our food.
