Dealing with Waiters

Don't be afraid to send something back to the kitchen if they don't give you what you expect. Just be polite and friendly, and waiters will usually be happy to fix your order. For that matter, make sure you are very clear when placing your order about what you want. Often, waiters don't know every ingredient in every dish, even if they appear confident that they do. For example, if you tell the waiter, "please bring me a raw vegan salad," you could end up with anything: croutons, eggs, a dressing that has dairy... but if you tell the waiter, "please bring me a raw vegan salad - I don't want any croutons, or dressing, or eggs - I just want vegetables," you'll pretty much always get just that.
